10. Fried chili potatoes
If you love loaded fries but you’ve been avoiding them because they aren’t good for your diabetes, here’s an alternative that is just as delicious. Peel and cube baking potatoes (about 3 cups).
Cook the potatoes in boiling water until tender. Heat ½ teaspoon of olive oil in a nonstick skillet. Sautee the onions until they are tender, add in potatoes, 1 teaspoon of chili powder, 1 teaspoon of dried minced onions, and a dash of garlic powder and pepper. Cook together until potatoes are lightly browned. Sprinkle ½ up of reduced-fat, shredded sharp Cheddar cheese.
