9. Onion and avocado salad
This salad is super simple to prepare, and it’s loaded with essential vitamins, like B12, as well as fiber and monounsaturated fatty acids, and protein, too. It tastes great alongside beef or chicken.
To make, de-pit, peel, and slice and avocado into thin strips. Thinly slice a medium sweet onion. Place the onion and avocado on a platter. Combine 1/3 cup of olive oil, ¼ cup stone ground mustard, 2 tablespoons of lemon juice, and 1 tablespoon of honey in a bowl. Whisk the ingredients until well blended and drizzle over the avocados and onions.
