4. Eggplant
Eggplant is nice because it kind of feels like a substantial mouthful of starch, while it actually isn’t. It is delectable when prepared with a tomato-based sauce (ideally one you make and not buy – purchased ones can contain a ton of sugar). Tomatoes, incidentally, also contain tons of stuff that help maintain healthy blood sugar levels, without the spike.
A big part of why people struggle with blood sugar levels is because the food they are aware of that is healthy, is so limited that they get bored with it, and go back to the appealing other fast food convenient options. This is not good. Eggplant is a great way to mix things up so you don’t get bored!
