5. Pepper pizza
Pizza is often considered a non-diabetic friendly food, as it is high in calories, fat, and carbs. However, with some modifications and healthy toppings, it can be tasty and diabetic-friendly food. Top a prebaked, low carb pizza crust with 1/3 cup of tomato paste, 1 cup of shredded skim mozzarella cheese, and ¼ teaspoon Italian seasoning.
Wash, de-seed and dice red, yellow and green bell peppers; about 1 ½ cups combined. Finely chop half of a sweet onion, mix with peppers and sprinkle over the top of the pizza. Bake at 450 degrees until cheese is melted.
