7. Mashed potato pancakes
Potato pancakes are delicious, satisfying and a great alternative to things like rice, bread, and pasta. They make a healthy side dish, or they can be topped with veggies for a healthy main dish.
To make, combine 1 pound of mashed potatoes with 1 tablespoon of minced onion, ½ teaspoon of pepper, and 1 cup of matzo meal. Split the mixture into 1/3 cup portions. Heat a skillet coated with cooking spray over medium-high heat. Place a patch of 2 or 3 potato pancakes into the pan. Cook the cakes on each side until golden brown.
